{Ingredients}
• 2 Chicken breasts - cut bite size
• Puréed Tomato or diced tomatoes - 300~400g (I used canned diced tomatoes)
• Extra virgin olive oil - 1 ~ 2 Tbsp
• White wine - 200ml
• Chicken stock or Water - 500ml
• Garlic - 3 cloves, thinly slice
• Bell pepper - 1 whole, direct roast to enhance flavor, keeping in ziplock for 30min., peel off roasted skins with kitchen paper, remove seeds and cut bite size
• Carrot - 1 whole, peeled, cut bite size
• Cabbage - 1/2, cut bite size
• Eggplant - 2 small or as you like, cut bite size
• Celery - 1 stem, cut bite size
• Onion - 1 whole, cut bite size
• Barley or your favorite grains - 1 cup, soak in water for 30min.
• Your favorite beans or peas - 1 cup (I used canned)
• Your favorite spices - as you like (I used bay leaves, rosemary, celeriac, coriander, pepper)
• Salt to taste
